Strawberry Glaze Pie

This is one of my favorite recipes, from summer, during childhood (probably my FAVORITE).  Strawberry season is earlier here in TN, it is now one of my favorite spring recipes.

The children were helping with the Cool Whip...I prefer real whipped cream, slightly sweetened...but when you're working with a time limit, it is awesome with Cool Whip.

Here's the recipe.



Ingredients
    • 1 quart strawberries
    • 3/4 cup water
    • 2 tablespoons cornstarch
    • 3/4 cup sugar
    • 1/4 teaspoon salt
    • optional: 3-5 drops for red food coloring (I DO NOT USE THIS!!)
    • 1 baked 9-inch pie shells
    • whipped cream ( or Cool Whip)

Directions

  1. Crush 1 cup of red ripe strawberries, add water and bring to a boil.
  2. Simmer for 3 minutes.
  3. Strain.
  4. Add water, if necessary, to make 1 cup liquid.
  5. Combine cornstarch, sugar, and salt and add to liquid.
  6. Stir until smooth.
  7. Bring to a boil and stir constantly until mixture thickens.
  8. Cool  (and add red food coloring).
  9. Place remaining whole strawberries in baked pie shell.
  10. Pour the glaze over the berries.
  11. Top the pie with whipped cream.
